  • Nonfat Greek yogurt50 g
  • Egg whites40 g
  • Oat flour20 g
  • Honey8 g
  • Blueberries25 g
  • Baking powder1 g

Contains: gluten, lactose, eggs,

In season: June – September

Method

  1. Preheat a conventional oven to 175 °C and line a loaf tin with baking paper. The quantities are for one slice: multiply them by the number of slices in the loaf.
  2. In a bowl whisk the Greek yoghurt with the egg whites and honey until smooth.
  3. Add the oat flour and baking powder and fold with a spatula until evenly combined.
  4. Rinse and dry the blueberries, toss them in a pinch of oat flour so they don't sink and fold them in gently.
  5. Pour into the tin, level and bake for 40 minutes, until the top is golden and a skewer in the centre comes out dry.
  6. Let it cool completely before slicing: while hot it is moist and squashes.
