Ingredients

For 1 serving

  • Rice cakes4
  • Shiitake mushrooms225 g
  • Sesame oil2 teaspoons
  • Tamari2 teaspoons
  • Chives4 g

Contains: soy, sesame,

In season: September – November

Method

  1. Clean the shiitake with a damp cloth or small brush rather than washing them; remove the stems, which are woody, and slice the caps about half a centimetre thick.
  2. Wash and dry the chives and snip them with scissors.
  3. Heat the sesame oil in a frying pan over high heat, add the mushrooms in a single layer and sauté for 4 minutes, stirring little, until golden and their liquid has gone.
  4. Pour in the tamari and cook for a few more seconds, until it evaporates and coats them.
  5. Spoon the hot mushrooms onto the rice cakes, finish with the chives and serve straight away, before the rice cakes soften.
