  • Cherry tomatoes13.5
  • Mintto taste

Contains: lactose

In season: June – September

Method

  1. Put a griddle or non-stick frying pan over medium-high heat to warm up for a couple of minutes.
  2. Meanwhile pat the halloumi dry with kitchen paper and cut it into slices half a centimetre thick.
  3. Wash and halve the cherry tomatoes and tear a few mint leaves with your fingers.
  4. Sear the halloumi in the hot pan with no fat for about 2 minutes per side, until golden-striped and it releases on its own: if you turn it too soon it sticks.
  5. Serve it straight away, still hot, with the tomatoes and mint.
