  • Quinoa25 g
  • Fresh tuna130 g
  • Green beans120 g
  • Cherry tomatoes80 g
  • Extra virgin olive oil10 g
  • Dried oreganoto taste

In season: June – September

Method

  1. Bring a pan of water to the boil, add salt and cook the rinsed farro for 25 minutes over medium heat. After 10 minutes add the quinoa, rinsed in a fine sieve.
  2. Meanwhile trim the green beans and cut them into 3 cm lengths; add them to the pan for the last 7 minutes, until tender but crisp. Drain everything once the farro is tender and the quinoa shows its little spiral germ.
  3. In the meantime wash and quarter the cherry tomatoes. Pat the fresh tuna dry with kitchen paper and salt it.
  4. Heat a non-stick pan over high heat with a little of the olive oil and sear the tuna for 1 minute per side, until browned outside and still pink inside; cut it into slices about 1 cm thick.
  5. Dress the warm grains and beans with the remaining oil, lemon juice, oregano and tomatoes and serve with the tuna on top.
