- Parsleyto taste
- Lemon zest2 g
- Potatoes200 g
- Lettuce80 g
- Tomatoes100 g
- Extra virgin olive oil10 g
- Saltto taste

Method
- Preheat a conventional oven to 200 °C. Scrub the potatoes, cut them into wedges leaving the skin on, toss them on a baking tray with half the oil and a pinch of salt and roast for 30 minutes, turning halfway, until golden and crisp.
- Meanwhile in a bowl mix the minced chicken with the chopped parsley, grated lemon zest, salt and black pepper; with wet hands shape a burger about 1.5 cm thick.
- Wash and dry the lettuce and tomatoes; tear the lettuce and slice the tomatoes.
- When the potatoes have 12 minutes left, heat a griddle over medium heat and cook the burger for 5 minutes per side without pressing it, until golden outside and cooked through with no pink: chicken must never be served rare.
- Dress the lettuce and tomatoes with the remaining oil and a pinch of salt and serve with the burger and potatoes.
