Ingredients

For 1 serving

  • Chestnut flour25 g
  • Apple0.5
  • Eggs0.5
  • Brown sugar8 g
  • Extra virgin olive oil4 g
  • Baking powder2 g

Contains: eggs,

In season: October – January

Method

  1. Preheat the oven to 180 °C (conventional) and line a small tin with baking paper.
  2. Peel and core the half apple and cut it into cubes of about 1 cm.
  3. Beat the egg in a cup and take half. In a bowl, whisk it with the brown sugar and extra virgin olive oil until smooth.
  4. Sift the chestnut flour and baking powder over the top and stir with a spatula until no lumps remain; fold in the apple cubes.
  5. Pour the batter into the tin, level it and bake for 30 minutes, until cooked through and a skewer inserted in the centre comes out dry.
  6. Let it cool in the tin for 5 minutes before turning it out: chestnut flour makes it fragile while hot.
