Method

  1. Wash and trim the aubergine and courgettes and slice them lengthways about 5 mm thick.
  2. Shape the lean minced beef into a burger about 1.5 cm thick, handling it as little as possible so it stays tender; press a small dimple into the centre with your thumb so it doesn't puff up as it cooks.
  3. Heat a griddle over high heat and cook the aubergine and courgette slices for 2 minutes per side, until soft and marked by the griddle.
  4. Put them on a plate and dress them with the oil, balsamic vinegar, torn basil and a pinch of salt.
  5. On the same griddle cook the burger for 4 minutes per side without pressing it down, until well browned outside; season with salt and pepper at the end.
  6. Serve the burger with the grilled vegetables and the bread.
