Ingredients
For 1 serving
- Chestnut flour45 g
- Raisins8 g
- Pine nuts5 g
- Extra virgin olive oil4 g
- Rosemaryto taste
- Soy milk150 ml
Contains: nuts, soy, sulphites,
In season: October – January
Method
- Preheat the oven to 190 °C (conventional). The quantities are for one slice: for a whole 8-portion tray (about 24 × 30 cm) multiply them by 8, except the soya drink. Put the raisins in a small bowl of warm water to plump up.
- Sift the chestnut flour into a bowl, as it tends to clump, and pour in cold water in a thin stream, whisking, until you have a smooth, runny batter, like a thick cream that drips off the spoon.
- Grease the tray with half the extra virgin olive oil, squeeze out the raisins and stir them into the batter, then pour it into the tray: the layer should be thin, about 1 cm.
- Scatter the pine nuts and the rinsed, dried rosemary needles over the top and finish with the rest of the oil in a thin drizzle.
- Bake for about 35 minutes, until the top is cracked in several places, the edges are dark and crisp and the inside is still soft and moist.
- Let it cool a little in the tray and serve a slice with a glass of soya drink.
